A career in journalism provides you with an opportunity to cover all kinds of events, writes Tom Byrne.
Last Thursday was no different when I had the chance to visit Cong for a sweet food-tasting afternoon in the stunning surroundings of Ashford Castle.
The morning’s offering, which was an invite-only event, saw the invitees indulge in the concept of ‘Paula Pastry at The Drawing Room’.

As I drove towards the views of Lough Corrib, I will be honest, I didn’t know what to expect as I entered the castle grounds. This was a new experience that I looked forward to sampling.
The sunshine added to the drive into the spectacular five-star venue, as I was welcomed into the dining room by the friendly Regina O’Donoghue, who is Director of Marketing at Ashford Castle.

I must say that Regina and her colleagues made the morning an occasion for all to enjoy.
From the pastry chef, Paula Stakelum, to the waiting staff, everything was conducted with a touch of class. Furthermore, the relaxed atmosphere eased you into the setting, with the breathtaking backdrop of the water fountain and lake adding to the experience.
The food - the most important part - was as delicious as one would expect.
For me, the standout item on the menu was the Wild Garlic Sugar Brioche. It was the type of confection that hit the spot for a savoury treat, and complemented the refreshing Preserved Crab Apple Iced Tea it was served with.
I could tell Paula, who has worked at the castle for over 10 years, was very committed to her work when she spoke about the menu she had on offer.

Following the brioche, the trio of exquisite sweet cakes showcased the seasonal ingredients and botanicals of the Ashford estate. The pastries and cakes, such as Paula’s Legend Chocolate with Estate Wood Sorrel, Dulce Choux and Strawberry Shortbread with Woodruff, are served with a glass of Lanson Champagne, for an extra flourish.
The memorable morning concluded when each guest was gifted a goody bag with a personalised note from Paula and a few further sweet treats to enjoy at home.
‘Paula Pastry at The Drawing Room’ is available to both residents and non-residents - priced at €60 per person (+ 15% service charge). It will be available from May to November, Thursdays through to Sundays, with time slots at 12.30pm and 2pm.
Paula Pastry’s haute pâtisserie concept is also a first for a hotel in Ireland and complements Ashford Castle’s Afternoon Tea.
